Prawns Newburg

IngredientsPrawns Newburg

  • 2 red onions
  • Small tin of tomatoes
  • 4oz mushrooms
  • 1 level tbsp cornflour
  • 4oz single cream or half fat crème fraiche
  • 1lb cooked prawns
  • 4oz rice
  • A little butter or 1 tsp oil
  • Brandy for flambé (optional)

Method

Melt the butter and fry the chopped onions lightly.  Add the mushrooms.  Add the tomatoes and simmer for 20 minutes.  Remove from the heat.  Add the cornflour blended with a little water.  Add the cream.  Add the prawns to the mixture.  Serve on boiled rice.

Alternative – try with pieces of cooked chicken breast.
